Ingredients:
- 1 raw pork baby back rib rack (about 2 to 2-1/2 lbs)
- 1 T. any pork seasoning/rub (use a seasoning with low sodium)
- 5 cups water
- 1 T. salt
- 1 T. olive oil
- 1 cup Green Mill Diablo Wing Sauce
- 1/4 cup Green Mill Diablo Wing Sauce
Preparation:
- Take the thin skin of the underside of rib off, by lifting one end with knife and gently pull until entire skin from end to end comes off.
- Season and rub both sides of rib with seasoning.
- Wrap in plastic wrap and refrigerate overnight.
- Remove plastic wrap and place rib in oven safe container with cover.
- Fill with water about 5 cups or entire rib is covered with water.
- Sprinkle water with 1 T. salt and cover.
- Place in pre-heated 325 degree oven.
- Cook for 3 hours or just when meat is starting to fall off bone.
- Take out of oven, remove rib from water and let cool completely uncovered in refrigerator.
- When completely cooled cut in between bone so each pieces has a bone and meat about 12 pieces.
- Place ribs in saute pan with 1/8 cup water over medium heat reheat covered for 5 minutes.
- Remove cover and add 1 cup Green Mill Diablo Wing Sauce and cover.
- Cook over low heat for 2 minutes, uncover and turn heat to medium toss ribs and cook 3 more minutes.
- Place ribs on plate stack side by side serve with 1/4 cup heated Green Mill Diablo Wing Sauce.
